Lentils are rich in folic acid, which not only helps your menstrual cycle, but it boosts your partner’s sperm quality. Likewise, folic acid is important for your growing fetus; folic acid can reduce the risk of your baby’s developing a brain or spinal defect.
Ingredients:
- 1 cup lentils
- 1 medium onion, minced
- 2 cloves of garlic, minced
- 2 carrots, sliced
- 4 cups of chicken or vegetable broth
- 2 tablespoons olive oil
- 2 tablespoons curry powder
Directions:
- Sauté the onion, garlic and carrots in the olive oil until lightly brown.
- Add the chicken or vegetable broth, lentils, and curry powder.
- Bring to a boil and then simmer for half an hour.
Carrots and butternut squash taste delicious when made into a creamy soup. Both carrots and butternut squash are a good source of beta-carotene, known to help produce progesterone and help improve sperm count.
Ingredients:
- 2 tablespoons butter
- 1 bunch of leeks, chopped
- 6 chopped carrots
- 3 peeled sweet potatoes, cubed
- 3 packs frozen cubed butternut squash
- 1-quart bottle of apple juice
- 5 cups chicken broth
- salt and pepper to taste
Directions:
- In a large pot, sauté the leeks until lightly brown.
- Add all of the other ingredients and simmer until the carrots, squash and sweet potatoes are soft.
- Finally, use a hand blender to puree the soup and season with salt and pepper.
Kale is an exceptionally nutrient-dense food, rich in folate, iron, omega-3 fatty acids, and vitamins A, C and K. Likewise, beans are a rich source of vegetable protein, high in fiber and rich in a number of essential vitamins and minerals. Furthermore, researchers have found that women who consume a lot of plant protein had an easier time conceiving.
Ingredients:
- 1 tablespoon olive oil
- 8 cloves of garlic, minced
- 1 large onion, chopped
- 4 cups of chopped kale
- 4 cups of chicken or vegetable broth
- 2 cans of cannellini or navy beans, drained
- 4 chopped tomatoes
- 1 cup chopped fresh parsley
- 2 teaspoons Italian seasoning
- salt and pepper to taste
Directions:
- In a large saucepan, sauté the onions and garlic in the olive oil until lightly brown and soft.
- Add the kale and sauté until it’s wilted.
- Add three cups of the broth and one can of beans, the tomatoes, parsley and Italian seasoning, and let it simmer.
- While that’s simmering, put the other can of beans and one cup of broth in a blender until smooth.
- Pour that into the rest of the soup to thicken it and simmer for 15 minutes.
